Our Concept

HighHouse transforms over the course of the day, from the light-filled daytime at lunch to the magical violet hours at sundown. Complementing the interior to invoke a sense of discovery for guests are paintings, sculptures and digital art by emerging and established artists.

Inspired by flavours that thrive where land meets the sea, HighHouse signature cocktails celebrate ingredients that are synonymous with communities from around the Pacific Coast, focusing on high impact flavour from single or multiple ecological sources in the region.

An invitation to immerse in soundscapes created by a roster of up-and-coming and prominent music selectors from Singapore and abroad. Each will chart auditory journeys that align with the genres of the night, such as House, Techno, Progressive Trance, Funk, Soul & Disco, as well as various sub-genres of electronic music.

HighHouse is rooted in Mod Pan-Asian flavours from the Pacific Coast

Flavours

Drawing on flavours from around the Pacific Coast, Executive Chef Sam Chin presents a tantalising Pan-Asian menu of sharing plates that spotlights fresh seafood, tropical fruits, and root vegetables. The palate pleasing selection includes creations like Ceviche in Fijian style, Dutch Kingfish Carpaccio, Whole Spanish Dover Sole with Homemade Chai Poh and Sakura Pork Belly in Massaman Curry served with Sticky Rice.

Chef Sam specialises in modern European cuisine and has been on a journey of discovery through the roots of modern fusion cuisine and the combinations of more than one cuisine. Through hybrid dishes that are commonplace in the locales of his travels, Chef Sam explores the definition of “Fusion Food” and its blending of culture, cuisine, regions, ingredients and flavours. He connects their dishes to familiar ones back home to create novel combinations that put a twist on familiar flavours.
